Receptury teplých pokrmů – Runštuk Jaroslav (2024)

The current 9th revised edition of the collection "Recipes for Hot Dishes" - Jaroslav Runštuk et al., which presents traditional and modern dishes primarily from Czech cuisine across nearly 600 pages. It also includes an overview of updated legislative and hygiene regulations, as well as a chapter titled "NEW RECIPES," which reflects not only modern trends in our gastronomy but also provides a glimpse into the history of Czech gastronomy. The chapter "NEW RECIPES" has recently been supplemented with additional recipes, some of which have their traditional representation in the noble interwar gastronomy. Among these recipes is the preparation of dishes made from snails, which rightly have their place in Czech gastronomy. Furthermore, the publication includes information about ALLERGENS, a list of allergens, and other obligations for entrepreneurs on how to inform customers about them. A statement from the UI SZPI regarding allergens is also included. Additionally, yields for selected ingredients when preparing dishes using modern technological equipment - combi ovens - are provided.
