The authors of this cookbook, along with a photographer, participated in a wild boar hunt in the forests of southern Sweden and were present when the shot was fired, as well as during the subsequent gutting and butchering. A 76 kg sow was taken down one early January morning, and her meat was enough for all 52 recipes in this book, including several treats for the dogs who were an important part of the hunting expedition. Wild boar meat is lean with a delicate game flavor, making it perfect for low-temperature cooking, grilling, and making sausages and ground meat dishes. Among the recipes, you'll find simple meals as well as more festive dishes, traditional recipes from grandmothers, and newer interpretations of meat preparation; all recipes are marked with a difficulty level from 1 to 3.
