Golden Classics – these are recipes for dishes that are the most beloved in our country and are considered an integral part of Czech cuisine. They mostly consist of the best of Czech classics, but I have also included classic recipes that we happily adopted during our travels to Greece, Croatia, Italy, Asia, or America and made them our own. I have always said that I prefer being a foot soldier of classics rather than an innovator and creator of something that has long been discovered. This is still true today, and after all these years in gastronomy, I know very well which dishes disappear from restaurant menus first.
