Description
Amaranth grain is exceptional primarily for its protein, which is similar in composition to animal protein and, when combined with certain grains, creates an ideal protein that contains all essential amino acids. It also contains starch that is absorbed slowly and binds water in the intestine. Last but not least, amaranth contains four times more fiber than common grains, which, along with its favorable fat composition, leads to a reduction in cholesterol levels when using amaranth.
