Academia Barilla selected 50 recipes that include potatoes. Some of them are typical Italian dishes, while others were created by combining the magic of potatoes with other typical ingredients of Italian cuisine: cheeses, meats, as well as chestnuts, mushrooms, and dried cod. Other recipes have origins in various countries, such as blini in Russia or rösti in Switzerland, and are not part of the history of Italian gastronomy. However, Academia Barilla chose them because they adhere to these principles: they honor and love basic ingredients, simplicity combined with elegance, and above all, they enjoy sharing their knowledge.
